It’s become a go-to in my kitchen because it’s so rewarding: the rich, crispy crust from the tallow and the bright, aromatic flavors from the Greek herbs create a meal that feels comforting yet sophisticated.

Why Tallow and Greek Seasoning Have Become My Go-To

I’ve always been a fan of bold flavors, and when I started cooking with tallow, it completely changed the way I approached searing meat. There’s something magical about using rendered beef fat; it has a depth of flavor that’s hard to beat. Tallow gives the meat such a beautiful, golden-brown crust, with a richness that makes every bite feel indulgent without being overwhelming. My Favorite Way to Sear Meat with Tallow and Greek Seasoning

There’s something satisfying about the simplicity of it all. When I’m craving a hearty yet fresh meal, I’ll pull out a beautiful cut of beef, a jar of tallow, and my favorite Greek seasoning mix. Here’s how I do it, step by step—so you can bring this technique into your own kitchen and enjoy it as much as I do.

Ingredients:

  • A beautiful cut of meat (steak, pork chops, chicken breasts—whatever I have on hand)

  • 1-2 tablespoons of tallow (I always have some in my fridge, and I love how it stores so well)

  • 2-3 teaspoons of Greek seasoning (I keep a jar of this blend ready to go)

  • Salt and pepper (just a pinch, if needed)

The Process:

  1. Prep the Meat: I always start by patting the meat dry with a paper towel. It’s such a simple step, but I’ve learned it’s the key to getting that crispy, golden-brown sear. I love the feeling of rubbing the seasoning into the meat—it's almost like massaging the flavors right into the surface.

  2. Season: I generously sprinkle the Greek Seasoning over both sides of the meat, making sure it’s evenly coated. Sometimes I’ll add a little extra lemon zest if I’m craving more citrusy brightness. The garlic, oregano, and dill always get me excited for that Mediterranean flavor.
